RECOMMENDATION: Marries superbly with pasta dishes and pizza. WINEMAKER'S COMMENTS: Parcels of Riverland Shiraz fruit were selected from their promise of primary fruit characters. The fruit was picked in the cool of the night and delivered to the winery as soon as possible after being harvested. The fruit was then crushed into stainless steel static fermenters where it was cooled to 15°C and macerated for 2 days at this low temperature. Yeast cultures were added to the tanks and the fermentation was carried out over a further 5 days. Each fermenter was pumped over on a regular basis to wet the cap with the wine and extract the colour and flavour from the skins. TASTING NOTES: Vibrant purple with deep red hues, this Shiraz displays aromas of black currant and cherry fruit with a subtle background of spicy oak. Soft and supple, fresh vibrant fruit flavours of cherries and liquorice are evident on the palate which has a tantalising chocolate finish. Hints of cinnamon, vanilla and oak add depth and complexity.
