COOK'S BRUT SPARKLING
Cook's Brut is made at the Mission
Bell Winery in Madera, California. Winemaker Shawn Griffin hand
selects all grapes, which come from the same vineyards year after year.
Every year, Shawn uses the same live yeast culture to start the fermentation
process, a culture that has been kept alive by successive Cook's winemakers
over the years. This careful grape selection and "proprietary"
fermentation process helps ensure that Cook's Brut maintains its unique
flavour year after year.

RECOMMENDATION:
Perfect as an apéritif,
with a dessert of fresh fruit with cream, or as part of a cocktail such as
the L.A. Infusion - 5 oz. Cook's Brut Sparkling mixed with 1.5 oz. of
infused syrup (1 cup water, 5 tbsp of sugar, 2 stalks of lemon grass, 1/4
cup fresh peeled & chopped ginger, 3 mint leaves; bring ingredients to a
boil in a sauce pan, reduce heat and simmer for 5 minutes, strain through
cheese cloth).
WINEMAKER'S COMMENTS:
100% stainless steel tanks are used for fermentation
to maintain the fresh, fruity character of the wine. Cook's Brut is
made using the Charmat process, which preserves the fruit character of the
varietals and makes a fresher, more flavourful wine. It is medium dry
with crisp fruit flavours and aromas of apple, pear, and toasty yeast, with
some floral nuances.
